Neureos – Goan Christmas Sweets
The season of Christmas gets the entire neighborhood bustling with fun, cheer and a helping hand. And when it comes to preparing Christmas sweets, we have all our neighbors coming together to prepare and spread the sweetness. One of the most memorable occasions which happen every year 🙂
Neureos forms the most important sweet in the kuswad (traditional sweet) tray. They are made of all purpose flour (maida) and stuffed with coconut, semolina, sugar, poppy seeds, cardamom, raisins and cashews. There are two varieties of fillings that are commonly prepared in Goa. One of the fillings consist of coconut and the other with moong powder. Both are yummy and delicious as ever. Below is a preparation with coconut filling.
The joy of preparing Christmas sweets at home rather than buying is immense. So, make some extra time and unfold the Joy of Sweetness.
1 Desiccated coconut
250 gms semolina
250 gms powdered sugar
3 cups oil to deep fry
1 1/2 tbsp ghee
50 gms Poppy seeds (Khus-khus)
1 tsp cardamom powder
200 gms cashew-nuts chopped coarsely
100 gms raisins
50 gms White sesame seed (til)
Salt for taste
For the Dough:
1/2 kg refined flour (Maida)
1 tbsp melted ghee
1 cup lukewarm water (as required)
Salt as per taste
Place a pan on medium heat. Saute the desiccated coconut until medium brown. Keep stirring, reduce the heat and keep aside the browned coconut. Saute semolina to a light golden color. Separately saute sesame seeds, poppy seeds, chopped cashew nuts lightly and keep aside.
Combine all the rest of ingredients like raisins, sugar and cardamom powder into the coconut, semolina and poppy seed mixture. Mix all of them nicely and your filling is ready. You can prepare the filling the previous night.
Combine flour and salt. Now pour melted ghee and lukewarm water. Knead into a smooth dough, it should not be too firm nor too soft. Cover with a damp cloth and allow to rest for 20 mins.
Now make 2 inch balls from the dough. Roll with a roller just like a chapati but not very thin.
Place a spoonful of sweet stuffing in the center.
Seal the edges with water using fresh cotton buds.
Fold over to the other edge, you can make your own design either by turning the fold towards inside or with a fork to give criss-cross design or the design cutters.
Place the Neureos one by one in a tray.
Take a deep frying vessel. Place on high heat. Once oil is hot reduce the flame to medium heat. Fry few neuroes at a time don’t clutter with too many.
Once they are lightly browned on both sides remove them and place them in a dish to drain. As you see in the picture, the first Neuri is designed in a shape of the cross and the rest follows.
